Lo Mein

 

Super flavorful, and customizable, a classic Chinese-American dish


 

 Recipe: (serves 4)

  • 2 chicken breasts (see note)
  • 1 garlic clove OR 1/2 tsp garlic powder
  • oil for sautéing 
  • 1 red pepper (or a mix of any colors)
  • 1 large red onion
  • 1 large carrot
  • 1 can  chopped baby corn
  • bean sprouts (canned or fresh)
  • bamboo shoots
  • water chestnuts
  • a combo of your favorite stir fry mix-ins. see notes 
  • 1/2 tsp ginger powder OR a tsp finely minced ginger
  • 1/4 cup soy sauce
  • 1/4 cup sugar

Pasta for serving (spaghetti, linguini or lo mein noodles)

 

 

Lo Mein


 

  1. Prepare all the veggies, slice the onion into half moons. Peel the carrot and then peel into strips, and slice the  peppers into thin strips. Drain the canned veggies and set aside. Rinse and drain fresh bean sprouts if using. 
  2. Cube the chicken into bite size pieces. In a hot pan add 2 tsp of oil, and sear the chicken to get some color, when almost fully cooked add a sprinkle of salt and the garlic and continue to fry until all the way cooked through. Remove the chicken from the pan, and set aside. 
  3. Add a bit more oil to the pan and add in your veggies. Sprinkle a small pinch of salt over the top and sauté them until your liking. You can leave them with some crunch or keep going until the are soft. Keep in mind they will soften more once the sauce is added. 
  4. Once the veggies are done to your liking, pour in the soy sauce, sugar, and add the ginger. Stir to combine, and then add the chicken back into the pan.

Serve mixed with your favorite noodles. 

Notes: 

  1. This recipe works great with chopped meat. For a vegetarian option go for tofu or your favorite chicken substitute.
  2. if you don’t have a stir fry veggie listed here you can skip it, and feel free to add in your favorites. Sliced mushrooms, broccoli, and  zucchini strips are some ideas.
